American Lamb Loin Chops ., 2 oz. olive oil 1 clove of garlic, minced Kosher salt to taste Cracked black pepper to taste Heat cast-iron or heavy. bottomed saucepan over medium-high heat until hot and barely smoking. Brush lamb chops with olive oil and minced garlic. Season liberally with salt and pepper. Place on pan for 3 min- utes a side or until medium-rare. Remove lamb chops from pan and let sit uncovered for 5 minutes. Serve with creamy red chile grits. Red Chile Grits 2 tablespoons olive oil 3 fire-roasted red bell peppers, skins are a delicious way to woo your loved one. peeled and seeded, medium dice 4 cloves roasted garlic 1 small red onion medium dice 1 tablespoon butter 4 cups chicken stock cup heavy cream 1 cup grits 2 cups shredded manchego cheese cup chopped chives Salt and pepper to taste In a hot sauce pot, add olive oil, roasted peppers, garlic and onion. Stir until well incorpo- rated, then add butter. Melt the butter down, then add chicken  and cream and bring tea boil After liquid comes to a boil, turn down the heat to medium-low and stir in grits and cheese. Keep stirring thor- oughiy until the grits are cooked all the way. Add chives, salt and pepper. OBITUARY CHARLES RAYMOND VOSS Mass of Christian Burial was held at the Basilica of St. John in Des Moines Tuesday, April 13, for Charles Raymond Voss, 78, who died Saturday, April 10, at his home in Des Moines. Burial was in the Linn Grove Cemetery, t:ural Norwalk. Mr. Voss was born May 13, 1931, the son of Raymond and Marie Voss of Prole. He graduated from Martensdale High School, served in the United States Army dur- ing the Korean Conflict and retired from farming and Armstrong Tire and Rubber Company in 1989. He enjoyed traveling, working on old cars, watching NASCAR and going to Las Vegas. He en- joyed his family the most. Survivors include his wife of 41 years, Margaret; daughter, Cheri (Joaquin) Fernandez; son, Dan Charles Raymond Voss (Theresa) Voss; grandsons, Rob and Patrick Fernandez; step-grandson, Joey Brown; sister-in-law, Lillian Wilson and numer- ous nephews and nieces. Services and burial were held in Des Moines Saturday, April 17, for Margaret J. Overton, 77, Clive, who died Monday April 12, at Mercy Medi- cal Center in Des Moines. Mrs. Overton was born July 31, 1932 in Des Moines to Roy and Clara (Prell) Overton. She had been a daycare provider for many years and volun- teered at the West Des Moines Senior Center. She enjoyed spending time with her family and friends. Survivors include her six children, Tom (Melody) Johnson, Ray (Cindy) Johnson, Dottie OBITUARY MARGARET J. OVERTON (Mark) Johnson, Linda (Ken) Hoffman, all of Des Moines, Lindy (Wayne) Larson, West Des Moines, and Joel Overton, Clive; 13 grandchildren; 15 great- grandchildren and two on the way; two brothers, Dr. Roy (Mary Loft) Overton II, Des Moines and Alvin (Sharon) Overton, Norwalk; two sisters, Miriam Todd, Des Moines and Mildred Floyd, Clive. She was preceded in death by her husband, Tom Perry and sister, Dolores Fath. Memorial contributions may be directed to the West Des Moines Senior Center.
